Strawberry Peanut Butter Nice Cream

It’s summer, and you’ve been working hard all day, and now all you want is some ice cream. But, you either don’t want all the extra sugar or don’t want the dairy. That’s where “nice cream” comes in. By combining frozen ripe bananas with whatever other ingredients you have in mind, the frozen bananas will create the base texture thickness to give it the traditional ice cream feel.
Summer or not, this has been a go-to treat for me for years. It’s so easy and yet so healthy! Kids will love it too - my nieces always ask me if we can make “ice cream” together, as to them it really is ice cream. You simply need a good blender or food processor to make it work. It’s like making a thick, heavy-duty smoothie. You can eat it immediately or make the nice cream in large batches and freeze it in loaf pans to scoop and serve later.
For any batch of nice cream, there are a few main components you will always need: frozen ripe bananas, dairy-free milk (though it will work with normal milk), and a pinch of salt to balance the sweetness and help amplify the other ingredients. From there, you can add in other components like strawberries, chocolate, raspberries, or coconut. Using ripe bananas is key to making the banana taste within the nice cream more subtle, thereby preventing it from overpowering the other ingredients that you are trying to highlight. So I’ll buy bananas and wait until the peel has plenty of black spots and sections on it. Next, I’ll peel them and cut the bananas into one-inch chunks to freeze in a freezer bag for later. (Quick Tip: Instead of throwing those banana peels away, soak them in a bowl of water for several hours to make some great potassium and nutrient rich water for your plants!)

Ingredients
1 ¼ cups frozen strawberries
1 cup frozen ripe bananas
½ cup almond milk (I prefer almond milk, but you can use other options here)
1 TBSP raw honey
¼ tsp Vietnamese cinnamon (Check Amazon) - You can use other cinnamons, this cinnamon is just so much richer in flavor
¼ tsp vanilla extract (Check Amazon)
Dash of cardamon
Pinch of sea salt

Steps
Place all the ingredients in your blender or food processor.
Blend:
If using a Vitamix blender, turn on and amp the speed up to High. You’ll see the ingredients not moving any more, so this is where you will use your tamper to push the ingredients down into the blades for about 45 seconds, or until you reach a smooth, yet still thick consistency. If using a regular blender or food processor, blend or process the ingredients until it is the consistency of a soft serve ice cream.
Scoop into bowls and enjoy! Or freeze into loaf pans for later.
