Peanut-Kale Potstickers

Trying to eat more raw kale, but having a hard time finding a recipe where it tastes good? Well this is my absolutely favorite way to use the kale growing in my garden. Four ingredients: Kale, peanut butter (I like to use chunky), liquid aminos (a healthier soy-sauce alternative that gives that same savory, umami-rich flavor, without gluten or MSGs. Check Amazon.), and frozen potstickers.

Simply cook your potstickers according to the bag directions. While they are cooking, you're going to chop up your kale into tiny shreds. Then, add your peanut butter and liquid aminos and manually mix it together. With the peanut butter being so thick and the kale so delicate, I find mixing with just a spoon too difficult to really spread it on all the leaves, so I work it together with a hand. For 4 cups of chopped kale, I used 3+TBSPs of chunky peanut butter and 1 TBSP of liquid aminos. You can adjust those proportions based on your taste buds. Then, cut up the cooked potstickers and throw on top. Easy, delicious, minimal ingredients, and a mostly healthy dinner. Enjoy!
