Grilled Lemon Lime Chicken Strips

Grilling chicken does not have to be complicated with fancy marinades and rubs that include a dozen different ingredients in them. This incredibly easy, five-ingredient lemon lime chicken makes a bright, zesty compliment to any salad or will shine as the star of the meal! It’s dairy-free and low-FODMAP as well, which is typically difficult to find in chicken recipes that often include onion, garlic, cream sauces, and butters.

As mentioned, this pairs wonderfully with most fresh salads such as greek salads, strawberry salads, or a good tabbouleh (pairs perfectly with my Fresh Tabbouleh Salad recipe). You can use the strips in wraps or just as a to-go snack eaten cold. I will even freeze some to save for later for that random recipe that calls for some chicken, and I’m too lazy to make chicken in that instance. So when I do make this, I typically make several pounds at once, knowing it will easily be used or saved.

Let’s jump right into the recipe. I wrote it for a six-pack of medium chicken breasts, about 3lbs of chicken. Feel free to adjust up or down as needed and just halve or double the recipe. The recipe is very forgiving and allows for you to add more or less juice and season as you see fit.

Steps

  1. Trim any fat from your chicken breasts and cut into smaller strips. Cut into about 3-4 chunks per breast. Place into a large dish or bowl.

  2. Season with the kosher salt and pepper.

  3. Wash and juice all the lemons and limes. Pour the juice over the chicken breasts.

  4. Let sit and marinade in the fridge for 1-2 hours.

  5. Throw on the grill at medium-high heat (about 450℉). Cook until internal temperature is about 170℉, or just make sure the chicken is not pink inside anymore.

  6. Serve and enjoy!

That’s it! Simple, easy, clean eating. It cooks up juicy and tender in no time. And it’s flexible - if you want more lime than lemon, go for it! I do make many other recipes with tons of ingredients in them, so it’s nice to have a dish that is pretty effortless. May you, your family, and friends enjoy this with your meal!

Ingredients
  • ~3lbs / 6 medium-sized chicken breasts

  • 2 lemons

  • 2 limes

  • 1.5 tsp quality kosher salt - such as Redmond’s Kosher sea salt (Check Amazon)

  • 1 tsp pepper
