Do you ever just need a good, easy dressing or vinaigrette for your meal? Whether it be to toss a salad in, top a grilled pork tenderloin, marinade some chicken, or drizzle over some roasted vegetables, this healthy Lemon Thyme Dijon dressing is the perfect compliment to them all. Best of all, it takes only five minutes to prepare and doesn’t require any blenders!

Olive oil, lemon juice, dijon mustard, and fresh herbs are the main components of this dressing. Considering this is a fairly straightforward recipe, the only detail I want to cover on the ingredients is regarding the addition of fresh lemon thyme or regular thyme to this recipe.

Fresh lemon thyme may be a bit harder to come by than regular thyme, but if you have it available, or can plant some in your herb garden, I would highly recommend this option first. Lemon thyme still has that savory, earthiness of the thyme to it, but also has a distinct fresh citrus punch to it. It’s ideal for any recipe that has any lemony component to it in place of regular time. It truly adds a brightness to the flavor and pairs extremely well with the more delicate summer ingredients. Regular thyme will still work, though I would associate choosing this more for the heartier stews, roasts, and soups that need that deeper herbaceous, earthy notes. While I don’t think you’ll be disappointed with either choice for this dressing, I would go a little lighter on the fresh thyme in it versus the lemon thyme.

Finally, because the recipe is using fresh herbs in it, if you are going to make extra to save for later, it will keep in an airtight jar in the fridge for up to a week. If you were using dried herbs, then it would be fridge safe for between 1-2 weeks.

Ingredients
  • 1 cup olive juice

  • ⅓ cup lemon juice

  • 2 TBSP dijon mustard

  • 2 tsp fresh lemon thyme or 1 tsp fresh thyme

  • ¼ tsp fine sea salt (Check Amazon)

  • Pepper, as needed

  • Raw honey (optional to taste)

Steps
  1. Prep your fresh lemon thyme or regular thyme by stripping the leaves from the stems. You will just use the leaves in the dressing.

  2. Use a quart jar or a larger bowl to whisk all the ingredients together. Give it a taste to make any adjustments per your taste buds. (I noted honey as an optional ingredient in case you would like a little sweetness in the dressing, which might be nice in a meat marinade more so than in a dressing for an arugula salad.)

  3. Pour into a pint jar for serving. I prefer the wide mouth pint jars. Much easier to add a small ladle to and clean later. (Check Amazon)

  4. Pour atop your favorite food! Store in the fridge for up to one week.
