Raise your hand if chaotic mornings leave you reaching for just a banana as you run out the door, or leave you skipping breakfast altogether. Whether you need a quick, ready-to-go breakfast for back to school, or you need an easy, healthy lunch to bring to the office, overnight oats are just the best! Super easy to make, takes five minutes of prep, and no cooking! Just stir, refrigerate overnight, and enjoy!
Basically, we are combining some pantry staples together to create a rich, flavorful, pudding-like oatmeal. I hate to even call it oatmeal, since it is so much more delicious than regular oatmeal. The chia seeds thicken it up and are packed with fiber, protein, and omega-3 fatty acids. The raw honey is anti-oxidant rich and helps to boost energy and aid digestion. The cinnamon can help stabilize blood sugar and promote satiety. Plus, add the goodness of a generous amount of vanilla, a hint of cardamom and sea salt, and of course, the oats - which provide energy, gut-regulating fiber, and more heart healthy antioxidants. And then there’s the milk, whether it be almond (which is what I use), coconut, oat, or even feel free to make this recipe with dairy milk if you want, they all will provide additional nutrients for the day.
Once you have the oats made, customize it with whatever toppings you want! I never fill the jars all the way, in order to leave room to add a few blackberries, raspberries, or blueberries, and sometimes even an extra drizzle of honey. Other options would be chopped almonds or walnuts, coconut flakes, granola, bananas or even dried cranberries. But I will say, if you don’t have the toppings on hand, or left them at home, you really don't need them - I eat this plain, as is, all the time!
Managing a dairy allergy at breakfast can create an extra level of challenge. When we think of breakfast, so many of the options, healthy or not, all have milk or butter in them: a bowl of cereal, pancakes, waffles, egg bakes, yogurts, and breakfast casseroles. So aside from this recipe being healthy and easy, it’s just an excellent option for those following a dairy-free or vegan lifestyle.
Final note, I would highly recommend being sure your rolled oats are organic as to avoid any unnecessary consumption of glyphosate or other pesticides that have been found in non-organic oats. You’ll note all my ingredients are natural or organic, but don’t stress it if the organic options are not available. Just my preference to make this extra healthy.

Prep Time: 5 mins | Soak Time: 8 hours (overnight) | Serves: 2 pints
Ingredients
1 ¾ cups organic old fashioned rolled oats
2 cups of almond milk (or you can use dairy, oat, etc.)
1.5 TBSP organic chia seeds (Check Amazon)
1 TBSP raw honey
2 tsp vanilla extract (I use Watkins (Check Amazon), which is slightly weaker, but delicous and well-priced, but for other brands you may need to use less vanilla.)
½ tsp of organic organic vietnamese cinnamon (Check Amazon)
¼ tsp of organic cardamon
⅛ tsp fine sea salt

Steps
Combine all the ingredients into a large bowl and mix together.
Divvy out into two pint, widemouth jars. Each jar should be about ¾ full to allow space for expansion from absorption and room for the toppings. (I prefer widemouth jars for this recipe so you can easily add the toppings, spoon it out, and clean. Here’s an option if you don’t have any on hand: Check Amazon.)
Set in the fridge overnight.
Eat as is, or add your toppings and enjoy!
Note, the overnight oats will stay fresh in the fridge for about 3-5 days. That’s it! A flavorful and filling breakfast or lunch that is quick, easy, healthy and dairy-free. And please, make this your own! Super simple to modify according to your taste preference. If you want it more creamy, add more milk. Sweeter - more honey!
